Ingredients

1 ½ cups oat flour

1 tsp baking powder

1 tsp baking soda

½ tsp Himalayan salt

1 tsp cinnamon

½ tsp ground nutmeg

3 overripe bananas (mashed)

1 flax egg (1 tbsp fround flaxseed + 2 tbsp water)

½ cup coconut oil (melted)
-
½ cup coconut sugar
-
1 tsp vanilla extract
-
½ cup chopped walnuts
-
½ cup chocolate chips
Directions
Preheat oven to 375 degrees and line a muffin pan with liners.
Mix flour, baking powder, baking soda, salt, cinnamon and nutmeg together in a bowl. Set aside.
Mix mashed bananas and flax egg, then add coconut oil, coconut sugar and vanilla extract until thoroughly mixed.
Mix dry and wet ingredients together until well incorporated, then fold in walnuts and chocolate chips.
Spoon mixture into muffin liners ¾ full, and bake for 20-22 minutes.
