sunflower seed pesto

                      Ingredients
- 
            
1 cup hulled sunflower seeds
 - 
1 garlic clove
 - 
2 cups arugula (packed)
 - 
1 cup fresh basil (packed)
 - 
Β½ cup extra-virgin olive oil
 - 
2 tsp agave syrup
 - 
1 tsp lemon zest
 - 
1 tbsp lemon juice
 - 
            
Β½ tsp Himalayan salt
 
Directions
Rinse sunflower seeds, and add to a bowl or a jar. Cover with water and allow to soak overnight. Drain and rinse.
Add all ingredients into a high-speed blender, and blend on high for approx. 2 minutes, or until smooth.
This pesto makes a delicious dip, or sandwich spread. Slather it, dip it, enjoy it!
