roasted broccoli + peanuts

1 head broccoli (trimmed and separated)

3 tbsp extra-virgin olive oil

2 tbsp rice vinegar

½ cup jungle peanuts
-
½ tsp coconut sugar

2 tbsp nutritional yeast

pinch Himalayan salt

pinch freshly ground pepper
Directions
Preheat oven to 450 degrees. Place broccoli florets on a rimmed baking sheet and toss with olive oil. Season with salt and pepper, and roast for 20 minutes. Add vinegar and toss to coat.
Place peanuts on a rimmed baking sheet, and roast for 10 minutes, stirring once.
Transfer broccoli to a dry, medium skillet. Cook for 5 minutes, until lightly charred in spots. Reduce heat and add roasted peanuts sugar, and nutritional yeast. Cook for 2 minutes, and serve with salt and more yeast.
