Wilted Lettuce with Chipotle Dressing


  • 2 heads of kale – de-stemmed and torn into bite-sized pieces
  • 1 tbsp salt
  • 1 tbsp oil
  • ½ cup hemp seed 
  • 1 cup diced baby tomatoes
  • 1 ½ cup avocado
  • Chipotle pepper powder to taste
  • 1 tbsp honey
  • 1/8 cup lemon juice


    Massage the kale with salt and oil till wilted.
    Add the hemp seeds and tomatoes and mix by hand.
    Blend the ingredients for the dressing till smooth and mix into salad and serve.
