Watermelon Salad


  • 6 cups cubed (small cubes) watermelon
  • 2 cups diced jicama
  • 3/4 cup diced red onion
  • 2 tbsp chopped fresh mint
  • Himalayan salt and fresh ground pepper to taste


      Combine all ingredients ‐ Let set for a bit to let flavors meld together before serving.
