Waldorf Salad

Ingredients

Dressing:
  • ½ cup raw cashews
  • 3/8 tsp salt
  • ½ cup fresh orange juice
  • 5 dates (soaked in orange juice or water to soften)
Salad:
  • 1-4 apples cut in chunks
  • 6 dates cut in pieces
  • ½ cup coarsely chopped walnuts
  • 1 or more stalks celery chopped
  • Handful (about ½ cup) seedless grapes

      Procedure

      Blend smooth all ingredients for the dressing and set aside.
      In a medium bowl, combine the ingredients for the salad.
      Pour dressing over the salad and toss to mix well.
      Stir in about a tablespoon of shredded coconut if desired.
      Refrigerate until serving time.
