Sweet Potato Pie

Ingredients

Crust
Filling
  • 4 medium sweet potatoes peeled and run through juicer with blank plate
  • 1 cup pitted medjool dates (soak in ½ cup water)
  • ½ cup nuts (brazil, pine, cashew, etc.) soaked in water for 1‐2 hours and drained
  • 1‐2 tsp cinnamon
  • 1 tsp ginger
  • Pinch cloves
  • ½ tsp salt

      Procedure

      Crust
      Process all ingredients for the crust in food processor until crumbly.  
      Press into a pie plate.

      Filling
      Place all filling ingredients in a blender and blend till smooth.  
      Add date soak water as needed to achieve desired thickness.
      Pour over crust in pie plate. Refrigerate.  
      Top with whipped cashew cream if desired
