Spiced Shredded Beet and Carrot Salad


  • ¼ cup lemon juice
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp cumin
  • ½ tsp cinnamon
  • ¼ tsp cayenne
  • Salt to taste
  • 3 cups shredded beets
  • 3 cups shredded carrots
  • ½ cup fresh parsley chopped
  • Cilantro (optional)


      Using a food processor, grate carrots and beets, separately.
      Place carrots in a large bowl and add all other ingredients and mix together well.
      Spread beets on top and let marinate in fridge for at least 2 hours.
      Serve and enjoy this refreshing salad.
