Snack Attack Jungle Bites


  • 2 cups nuts and seeds *
  • 1 cup unsweetened shredded coconut
  • 1 cup dates
  • 3 tbsp melted coconut oil
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • pinch of Himalayan Pink Salt
*use 1 ¼ cup cashews and walnuts; ¼ cup jungle peanuts; ¼ cup hulled hemp seeds; ¼ cup pumpkin seeds; 2 tbsp chia seeds


      Put nuts and seed mixture into food processor with shredded coconut and pulse till well-combined and broken down (2-3 mins).
      Add remaining ingredients and pulse till thoroughly mixed.
      Shape into little balls or squares or into paper-lined mini muffin tins.
      Enjoy! Store in an air tight container in the fridge.
