Red Pepper Pate’


  • ½ heaping cup pistachios (can use walnuts instead of pistachios)
  • 1 tsp chopped rosemary leaves
  • 1 small garlic clove
  • ½ tsp salt
  • ½ cup chopped red bell pepper
  • ½ cup chopped zucchini
  • 1 tbsp diced sweet onion


      Process the first four ingredients until almost smooth. 
      Then add the remaining ingredients. Process until fairly smooth, but still lumpy.
      Use pate’ as desired and garnish.  
      Makes enough for 2‐3 as a main dish or 6‐8 as an appetizer or side dish.
