Raw Tabouli Salad

Ingredients

  • 1 bunch cilantro
  • 1 bunch parsley
  • 2 scallions (green onions)
  • ½ pint cherry tomatoes
  • 1 tbsp honey
  • 1 avocado (diced)
  • 1 cup raw almonds (soaked or un-soaked)
  • 1 lemon, juiced
  • 1 tbsp olive oil
  • 1 tsp salt

     

    Procedure

    Take cilantro and parsley leaves off of stems and rinse and spin dry.
    Chop and add green onions, tomatoes, and avocado.
    Food process almonds until fine.
    Add to vegetables.
    In small bowl, mix lemon juice, oil, salt and honey, and pour over vegetables and mix.
