Protein Cookie Sandwiches

- 2 ripe bananas
- 4 tbsp coconut sugar
- 6 1/2 tbsp cashew butter
- 1/2 tsp vanilla extract
- 4 3/4 tbsp gluten-free oat flour
- 75g vegan vanilla protein
- 1 tsp baking powder
- Pinch of Himalayan Pink Salt
- 1/4 cup dark chocolate chips + 1/2 tsp coconut oil (melt together)
Preheat oven to 350 F and line a baking sheet with parchment paper.
Mash the banana, mix in coconut sugar, vanilla, and cashew butter until combined.
Add in the oat flour, baking powder, protein powder, and salt. Mix well.
Portion out 16 heaping tbsp size cookies and place on the lined baking sheet about 1 inch apart from each other.
Gently flatten each one.
Bake for 10 minutes.
Let cool for 5 minutes on the pan and then move to a cooling rack to cook completely.
Add a tsp size serving of chocolate on 8 of the cookies and then assemble the sandwiches.
These can be kept on the counter for 2 days for a soft cookie or in the fridge for a week for a more firm cookie.
