Pepper Cheese Log


  • 2 cups raw cashews, soaked for 30 min.
  • 5 tbsp lemon juice, or 3 tbsp lemon juice and 2 tbsp rejuvelac
  • 6 small cloves garlic or equivalent
  • 1 tsp ground peppercorns
  • 1 tsp Himalayan salt
  • ¼ cup filtered water


      Process all ingredients until smooth, adding only enough water to make a smooth, creamy, moldable texture.
      If desired, form mixture into a roll and roll in smoked cracked peppercorns.
      Refrigerate for 2 hours before serving.
      Will keep for four days in refrigerator.
