Orange Carrots


  • 4 cups shredded carrots
  • 4 tbsp orange juice (or more to taste)
  • 3 tbsp lemon juice
  • 1 tbsp oil (or expeller-pressed grape seed)
  • 1 tbsp orange zest
  • 1 tsp lemon zest
  • 1 tbsp maple syrup
  • Dash of ginger
  • Small bunch of parsley or to taste


      Shred carrots and set aside.  
      Put the rest of the ingredients in a blender.
      Pour over carrots and toss.
      Serves 4‐6.
