Meatballs

Ingredients

  • 1 chopped zucchini squash
  • 1 finely chopped carrot
  • ½ diced red pepper
  • ½ chopped onion
  • 2 sprigs chopped parsley
  • 1 small clove finely chopped garlic
  • ½ tsp oregano
  • 1 tbsp dry or fresh basil
  • ¼ tsp dried cloves
  • ½ tsp marjoram
  • 14 tsp dry or fresh (ground) rosemary
  • 1 tbsp celery powder
  • 1 tbsp tomato powder
  • 1 tsp kelp powder
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ cup pumpkin seeds, finely ground (can do this in a coffee grinder)

      Procedure

      Mix all ingredients together.
      You can add some ground flax seed to make the “dough” a little stiffer.
      Make into small balls and dehydrate at 105 degrees for about 6 – 10 hours till desired firmness.
      Serve with zucchini squash spaghetti and marinara sauce.

      *You can warm the spaghetti, meatballs and sauce in the dehydrator or just till warm on the stove if desired.
