Marinara Sauce


  • 1 ½ cup sun dried tomatoes
  • 2 small fresh tomatoes
  • 8 dates
  • 2 cloves garlic
  • About 1 cup fresh basil
  • About 1 sprig fresh rosemary
  • About 4 sprigs fresh oregano
  • 2 tsp salt or to taste
  • 4 tbsp olive oil


      Soak sun-dried tomatoes and dates in 2 cups water for 15 min. Save soak water.
      Combine everything except water in food processor and process until fairly smooth.
      Add tomato and date soak water plus additional water as needed to achieve desired consistency.
      Serve over zucchini spaghetti noodles. Add “meatballs” if desired.
