Kat's Cashew Cheese


  • 2 cups raw cashews
  • ½ ‐1 cup pineapple chunks
  • 1 cup red and yellow bell pepper diced and mixed
  • 1 small to medium red onion
  • Juice of 1 small lime
  • Dill weed to taste
  • Salt to taste
  • Coconut Aminos to taste
  • Cayenne pepper to taste (optional)


      Using the food processor with X Blade, blend cashews with lime juice until smooth.  
      Add pineapple chunks and blend evenly.  
      Remove from container and place in a bowl.  
      Add dill, salt, coconut aminos and cayenne pepper to taste.  
      Fold in mixed bell pepper and onion.  
      Serve with flax crackers or veggies, etc.
