Hempseed “Couscous” Salad

Ingredients

  • 1 cup hemp hulled seeds 
  • ¼ tsp saffron or turmeric
  • 1 tsp extra virgin olive oil
  • 3 scallions, thinly sliced, or ¼ cup sweet, diced onions
  • 2 plum tomatoes, seeded and diced
  • 1 cup seeded and diced cucumber
  • 1/3 cup chopped dried apricots or currant or a little of both 
  • 1 tbsp minced fresh parsley
  • 2 tbsp minced fresh mint
  • Juice of ½ orange
  • ¾ tsp salt

     

    Procedure

    Combine all ingredients in bowl and toss to mix well.
