Hail to the Kale Salad

Ingredients

  • 24 oz kale (remove stems from kale and cut into bite sized pieces)
  • sliced almonds
Dressing 
  • 1 cup almond butter
  • 1 cup coconut water or plain water
  • ¼ cup fresh lime juice (about 2) and zest
  • 2 cloves garlic
  • 1 piece fresh ginger
  • 2 tbsp tamari or coconut aminos
  • 4 pitted dates, soaked (use soak water as part of the 1 cup of water)
  • ½ tsp red pepper flakes

    Procedure

    Blend dressing ingredients till smooth.  
    Massage into kale and top with sliced almonds.

    Option
    Can add shredded beets and/or carrots, can use peanut butter or ½  cup almond butter and a 15oz can of drained cannellini beans.
