Curry Cabbage Lentil Salad

Ingredients

  • 1 tbsp curry powder
  • 4 tbsp lemon juice
  • 1 tsp salt
  • 1 cup red bell pepper, chopped
  • 2 cups lentils, sprouted
  • 1‐2 tbsp garlic, chopped
  • ½ cup olive oil
  • 1 cup onion
  • 4 cups purple cabbage

      Procedure

      Combine curry powder, garlic, lemon juice, olive oil and salt into a dressing.
      Chop all vegetables and combine with sprouted lentils.
      Cover with dressing and toss well.  
      Serve immediately or refrigerate overnight to marinate.
