Curry Cabbage Lentil Salad
- 1 tbsp curry powder
- 4 tbsp lemon juice
- 1 tsp salt
- 1 cup red bell pepper, chopped
- 2 cups lentils, sprouted
- 1‐2 tbsp garlic, chopped
- ½ cup olive oil
- 1 cup onion
- 4 cups purple cabbage
ProcedureCombine curry powder, garlic, lemon juice, olive oil and salt into a dressing.
Chop all vegetables and combine with sprouted lentils.
Cover with dressing and toss well.
Serve immediately or refrigerate overnight to marinate.
