Cucumber Dill Soup


  • 4 cups filtered water
  • 2 cups cucumber, peeled and chopped
  • 1 cup celery, sliced
  • ½ cup avocado, mashed
  • 1 tsp garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed orange juice
  • 2 tsp fresh dill, minced
  • 2 tbsp yellow onion, minced
  • 1 ½ tsp salt
  • Pinch cayenne (optional)


      Place water, cucumber, celery, avocado, garlic, olive oil, orange juice, dill, onion, salt and cayenne in a blender and blend on medium speed for 20 seconds or until smooth.
      Serve chilled or just out of the blender.

      VARIATION:  Try replacing dill with your favorite herbs or adding 1 cup chopped veggies of your choice after blending the soup.
