Cilantro Salad


  • 1 can black beans (15.5 oz), rinsed and drained
  • 9 oz fresh or frozen corn
  • 1 tomato, chopped (or medium hot salsa)
  • 1 red bell pepper  
  • 1 small sweet onion, chopped
  • 1 lime, juiced (or lemon)
  • 3 tbsp extra virgin olive oil
  • Cilantro, chopped (use to your taste)
  • Salt and fresh pepper  
  • 1 small avocado, diced (optional)


      Combine beans, corn, tomato, onion & cilantro.  
      Mix lime juice, olive oil, salt & pepper & pour over salad.  
      Mix well.  
      Marinate in the refrigerator for 30 minutes.
      Add avocado before serving.   
      The longer it sits, the better it is.  Good for a few days in fridge.
