Chunky Bruschetta

  • 1 tomato, diced
  • 1 pint cherry tomatoes slice in half
  • 1 cucumber, diced
  • 2 garlic cloves, minced
  • 1 handful fresh basil, chopped
  • ¼ cup red onion, minced
  • ½ tsp crushed red pepper
  • Balsamic vinegar
  • Extra virgin olive oil


      Drizzle balsamic vinegar and plenty of extra virgin olive oil over veggies.
      Stir all the ingredients together and enjoy over gluten-free bread or cracker.
