Chocolate Covered Dates


Caramel Inside
  • 1 cup pitted medjool dates
  • 2 tbsp ground chia seed
  • 1 tbsp nut butter (optional)
  • a pinch of salt (optional)
Chocolate Coating
  • ¼ cup plus 3 tbsp dark chocolate pieces/chips
  • ½ tsp coconut oil (optional)


      Process in food processor till chopped and a sticky paste is formed.
      Roll into small balls and freeze on a parchment lined tray.
      May add a tbsp or so of nut butter and a little salt.
      Add a couple spoons of ground chia seed.

      Chocolate Coating
      Melt in double boiler on low heat.
      Stir till almost all melted and remove from heat and continue stirring.
      May add coconut oil
      Dip frozen date balls into chocolate and place back on parchment lined sheet.
      Return to freezer.
      Best if served frozen. Will soften at room temperature.
