Beery Truly RAWmazing Chili

Ingredients

Beans & Veggies
  • 1 1/2 cup corn
  • 1 portobello mushroom, finely chopped
  • 1/2 cup minced celery
  • 1/2 cup chopped red onion
  • 1 red bell pepper, finely chopped
Burger
  • 2 cups sunflower seeds
  • 2 tbsp olive oil
  • dash of salt & pepper
  • 1 tsp each cumin, oregano, cayenne, & chili powder (mixed to look like burger)
Tomato Base
  • 1-1/2 cups sun-dried tomatoes, soaked
  • 2 cups water, from sun-dried tomatoes soaking liquid
  • 4 roma tomatoes
  • 3 tbsp olive oil
  • 1/4 cup nama shoyu or Bragg aminos
  • 5 cloves garlic
  • 2 tbsp fresh oregano
  • 1 tbsp dry oregano
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 lemon, juiced
  • 1 tbsp honey
  • 1/4 tsp cayenne pepper

        Procedure

        Beans & Veggies
        Place corn, mushrooms, celery, onion, & bell pepper in a large bowl.

        Burger
        Pulse sunflower seeds & seasoning in a food processor until a burger consistency is achieved.
        Add to bowl of beans & veggies.

        Tomato Base
        Blend remaining ingredients in Vitamix until smooth.
        Add to bowl, mix all ingredients until well combined.
        Store in refrigerator & warm in dehydrator prior to serving.
