Apple Carrot Salad

  • ¼ cup fresh lemon or lime juice
  • 2 tbsp orange juice
  • 1 tbsp honey
  • 2 cups apple (peeled if desired)
  • 2 cups carrots (shredded)
  • 1 tbsp fresh mint (chopped)
  • 1/8 tsp salt or to taste
  • ¼ cup raisins (optional)


      Mix lemon and orange juice and honey together in a large bowl until honey is dissolved.
      Grate the apples directly into juice mixture to prevent apples from browning.
      Toss the carrots, fresh mint, salt and raisins with apples and serve immediately.
