SPICED SHREDDED BEET AND CARROT SALAD

Ingredients
¼ cup lemon juice
2 tbsp olive oil
2 tbsp honey
1 tsp cumin
½ tsp cinnamon
¼ tsp cayenne
salt to taste
3 cups shredded beets
3 cups shredded carrots
½ cup fresh parsley chopped
Cilantro (optional)
Directions
Using a food processor, grate carrots and beets, separately.
Place carrots in a large bowl and add all other ingredients and mix together well.
Spread beets on top and let marinate in fridge for at least 2 hours.
Serve and enjoy this refreshing salad. Add walnuts if desired.
