PUTTANESCA TOMATO SAUCE

1 ripe tomato chopped (approximately ½ cup, can also use 2-3 Roma tomatoes)
½ cup sun-dried tomatoes soaked or oil-packed (if not oil-packed, soak with some olive oil and either fresh herbs like oregano and basil or some dried Italian seasoning)
½ red pepper, chopped
2 tbsp extra virgin olive oil
1 tbsp fresh basil minced or 1 tsp dried oregano or Italian seasoning
½ tsp crushed garlic or to taste
½ tsp herbamare
Salt and Cayenne pepper to taste
1 tsp maple syrup, if needed to sweeten a bit
Sliced black olives
Process all the above in a food processor with the S blade or blender till smooth.
Remove and add sliced black olives and stir.
