Ingredients
4 cups shredded carrots
4 tbsp orange juice (or more to taste)
3 tbsp lemon juice
1 tbsp oil (or expeller-pressed grape seed)
1 tbsp orange zest
1 tsp lemon zest
1 tbsp maple syrup
Dash of ginger
Small bunch of parsley or to taste
Directions
Shred carrots and set aside.
Put the rest of the ingredients in a blender.
Pour over carrots and toss.
Serves 4‐6.
