Ingredients
1 small jicama
Carrot
Onion
Red pepper
Jalapeno pepper
1/3 cup yogurt
2 tsp fresh lime juice
1 ½ tsp apple cider vinegar
1 tsp honey
2 tbsp cilantro
¼ tsp cumin
Dash cayenne pepper
salt and pepper to taste
Dressing
Directions
Peel and cut jicama into “match sticks”.
Chop up little jalapeno (to desired heat/flavor), carrot, red pepper and onion.
Whisk all the ingredients for the dressing.
Toss the jicama mixture with dressing.
Chill and serve.
