Ingredients

1 cup cashews
2 tbsp olive oil

2 tsp nutritional yeast

¼ cup water
1 tsp garlic, minced
1 tsp Nama Shoyu (optional)
2 tsp Apple Cider Vinegar
Juice of ½ small lemon

salt to taste
Directions
Place all “Cheese” ingredients except olive oil in food processor and blend until chunky.
Drizzle the olive oil into the mixture. Mix until creamy and firm.
Let cheese sit out at room temp covered with a towel for six to twelve hours.
Using a plastic wrap, place the cheese into the center of the plastic wrap.
Wrap the cheese in the plastic wrap, forming a sphere.
Place in fridge. Chill at least 2 hours
Remove from fridge and roll in chopped nuts (optional).
Serve with flax crackers or veggies.
