Ingredients

1 cup hemp seeds
¼ tsp saffron or turmeric
1 tsp extra virgin olive oil
3 scallions, thinly sliced, or ¼ cup sweet, diced onions
2 plum tomatoes, seeded and diced
1 cup seeded and diced cucumber
1/3 cup chopped dried apricots or currant or a little of both
1 tbsp minced fresh parsley
2 tbsp minced fresh mint
Juice of ½ orange

3/4 tsp salt
Directions
Combine all ingredients in bowl and toss to mix well.
