HAIL TO THE KALE SALAD

Ingredients
24 oz kale (remove stems from kale and cut into bite sized pieces)

sliced almonds
1 cup almond butter
1 cup coconut water or plain water
¼ cup fresh lime juice (about 2) and zest
2 cloves garlic
1 piece fresh ginger
2 tbsp tamari or coconut aminos
4 pitted dates, soaked (use soak water as part of the 1 cup of water)
½ tsp red pepper flakes
Dressing
Directions
Blend dressing ingredients till smooth.
Massage into kale and top with sliced almonds.Note/Tip: Can add shredded beets, carrots, or bell peppers for more color if desired. Also, you can substitute peanut butter or ½ cup almond butter and a 15oz can of drained cannellini beans for other ingredients.
