CURRY CABBAGE LENTIL SALAD

Ingredients
1 tbsp curry powder
4 tbsp lemon juice
1 tsp salt
1 cup red bell pepper, chopped
2 cups lentils, sprouted
1‐2 tbsp garlic, chopped
½ cup olive oil
1 cup onion
4 cups purple cabbage
Directions
Combine curry powder, garlic, lemon juice, olive oil and salt into a dressing.
Chop all vegetables and combine with sprouted lentils.
Cover with dressing and toss well.
Serve immediately or refrigerate overnight to marinate.
