3 cups melon, sliced in thin long strips
¼ cup fresh basil, julienned
1 cup red onion, sliced thin
¼ cup pistachio nuts, chopped
2 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
2 tbsp honey
1/2 tsp salt
1/8 tsp red pepper flakes (optional)
Chill cucumber and melon before slicing into long strips with a potato peeler.
Add basil, red onion and pistachio nuts and mix together lightly.
Toss with dressing, chill, and serve for a cool and refreshing summer salad treat.
