Soup, Salad, Dressings
1 can black beans (15.5 oz), rinsed and drained
9 oz fresh or frozen corn
1 tomato, chopped (or medium hot salsa)
1 red bell pepper
1 small sweet onion, chopped
1 lime, juiced (or lemon)
3 tbsp extra virgin olive oil
Cilantro, chopped (use to your taste)
1 small avocado, diced (optional)
salt and pepper to taste
Combine beans, corn, tomato, onion & cilantro.
Mix lime juice, olive oil, salt & pepper & pour over salad.
Marinate in the refrigerator for 30 minutes.
Add avocado before serving.
The longer it sits, the better it is. Good for a few days in fridge.
