BLUEBERRY DESSERT

Ingredients

1 cup soaked cashews

1 cup pecans
-
pinch of salt
4-6 medjool dates
¼ cup coconut
4 cups FRESH blueberries (blueberries must be fresh for pectin to make it thicken)
1 ripe banana
1 tbsp raw honey
Blueberry Filling
Directions
Pulse chop the cashews, pecans, and dates till crumbly and add the coconut and salt.
Mix together the ingredients for crust and press into the bottom of an 8x8 or 7x11 baking dish.Blend all ingredients for second layer till smooth.
Pour over crust.
Blueberries have a lot of natural pectin in them and this will set up really nicely.
Top with additional 1 cup of fresh berries.
