Looking for a flavorful vegan chili recipe with protein & nutrients? Try this raw chili recipe, made with fresh veggies, corn, and a blend of tasty spices.

Ingredients
1 1/2 cup corn
1 portobello mushroom, finely chopped
1/2 cup minced celery
1/2 cup chopped red onion
1 red bell pepper, finely chopped

2 cups sunflower seeds
2 tbsp olive oil

salt and pepper to taste
1 tsp each cumin, oregano, cayenne, & chili powder (mixed to look like burger)
1-1/2 cups sun-dried tomatoes, soaked
2 cups water, from sun-dried tomatoes soaking liquid
4 roma tomatoes
3 tbsp olive oil
1/4 cup nama shoyu or Bragg aminos
5 cloves garlic
2 tbsp fresh oregano
1 tbsp dry oregano
2 tbsp chili powder
1 tbsp cumin
1 lemon, juiced
1 tbsp honey
1/4 tsp cayenne pepper

Directions
Beans & Veggies
Place corn, mushrooms, celery, onion, & bell pepper in a large bowl.Burger
Pulse sunflower seeds & seasoning in a food processor until a burger consistency is achieved.
Add to bowl of beans & veggies.Tomato Base
Blend remaining ingredients in Vitamix until smooth.
Add to bowl, mix all ingredients until well combined.
Store in refrigerator & warm in dehydrator prior to serving.
